Dave's Pies for Thanksgiving

 
Caramel Apple Pie

Filling:
6 c Granny Smith apples
½ c packed brown sugar
½ c sugar
¼ c flour
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
1 Tbs lemon juice
1 tsp vanilla
4 Tbs heavy cream
4 Tbs butter

Peel & slice apples. Sprinkle with lemon juice.
Combine dry ingredients in large bowl, mix.
Add apples and toss to coat. Add vanilla & cream.
Melt butter in heavy skillet, add apple mixture & cook for about 8 minutes to soften apples.
Pour into pie shell.

Streusel Topping:
½ c flour
3 Tbs sugar
1 Tbs butter
2 toffee bars, crushed

Combine the flour and sugar.
Mix in butter with fork until coarse crumbs form.
Add toffee bars and mix. Sprinkle over pie. Add top crust.
Seal, flute edge and vent top.
Brush with beaten egg white and sugar.
Bake for 15 mi @ 450°. Reduce heat to 350° and bake 45 minutes more, or until crust is golden brown.

 
Chocolate Chip Pecan Pie
3 eggs
1-½ c sugar
½ c flour
6 Tbs butter, melted
½ tsp salt
½ tsp lemon juice
½ c corn syrup
1-½ c semisweet chocolate chips
1-½ c chopped pecans

Preheat oven to 350°.
  In large mixing bowl, beat eggs until fluffy.
Add sugar, flour, melted butter, salt, lemon juice, and corn syrup.
Mix thoroughly, then stir in chocolate chips and pecans.
Pour into pie shell
Bake for 45 minutes or until set and golden.
