Wow!! 58!?! How did I get here?

Well believe it or not I turned 58! It makes you wonder where all the time went! It was a great evening spent with Dave and the the girlies-and of course that crazy corgi ! What else could a gal ask for? Funny Dave told the gal he ordered the cake from my favorite color was green-that's a pretty pink cake!

Two more done!!!!!!

Well I finished my two cross stitches that go with the big one for my bathroom!!!! I have to admit they were quite easy and that I finished them in a little over a week! Anyways still have my coupon so I can take them to Michaels tomorrow. Dave leaves for Kansas again next week and then for Dallas the next week for a few days so I'll have to get busy on something else to occupy myself.

Roast Chicken

  • 1 whole Chicken, Rinsed And Patted Dry
  • 3/4 cups Butter, Softened
  • 3 whole Lemons
  • 4 sprigs Rosemary
  • Salt And Pepper, to taste

Preparation Instructions

Preheat oven to 425 degrees.
Zest two of the lemons. Strip the leaves off of one of the rosemary sprigs and chop it up finely.
In a bowl, combine softened butter, lemon zest, rosemary, and salt and pepper to taste.
Line a baking sheet with heavy duty aluminum foil and lay the patted-dry chicken on the foil, breast side up.
Use your fingers to smear the butter mixture all over the chicken, under the skin, and inside the cavity. Cut the lemons in half and squeeze the juice of one lemon all over the chicken. Place the six lemon halves (if they'll fit!) and the three remaining rosemary leaves into the cavity of the bird.
Place the chicken into the oven and roast it for 1 hour, 15 minutes or until done. Skin should be deep golden brown and juices should be sizzling.
Carve/cut up to your heart's content and dig in!

I love watching Pioneer Woman!!! Last week she did a Roast Chicken using rosemary ( since we planted two bushes out front , I'm always looking for things to cook with it!). Anyway it turned out so yummy and was so
easy!!! Dave was quite proud of me and took this picture.

Easter!!!!

I guess our two girls will never get too old for an Easter Basket. I must admit Dave and I have just as much fun filling them as they have getting them!!
The Linnie look as Dave calls it !
It's still fun finding all the stuff we put in them!!!

I think they both thought the sleep mask were a hoot!!!

Laura's David came over and had Easter lunch with us. Then they had to go spend dinnertime with David's family.
 Dig in everybody!!! Happy Easter!!!!
